Why it is renowned

Castello cheeses are sold in Europe and North America, and Castello Creamy Blue is the largest cheese in the range worldwide.¹² As early as 1963 the Danish cheesemongers' award praised the cheese for its popularity at home and abroad.² In the United States its Rosenborg blue won the American Culinary Institute's gold medal for taste five years running, from 2001 to 2005.²

The story

The cheesemaker Rasmus Tholstrup founded Castello in Denmark in 1893, naming it after his love of southern Europe.¹ His son Henrik created Castello Creamy White in 1944, a brie that ripens from the inside out under a thin rind.¹ Henrik bought several Danish dairies in 1958; four years later they made 2,200 Castello cheeses a day, and thirty years on 60,000.² Castello Creamy Blue followed in 1969.¹ The brand now belongs to Arla Foods, the dairy co-operative based in Viby near Aarhus.²
