Why it is renowned

Creamy White was the first new cheese the Tholstrup family developed, and Castello still describes it as a first of its kind: a brie that matures from the inside out, giving a creamy centre under a very thin rind.12

The story

Henrik Tholstrup created the cheese in 1944.1 It is made in Denmark from cow's milk and cream: the curds are formed in large open vats, the cultures are added by hand, and the cheese is cut by hand once it is firm enough, then inspected piece by piece before packing.2 It comes in 150 g and 200 g half-moons.2
