Why it is renowned

Castello Aged Havarti won a silver medal at the Global Cheese Awards in 2015.12 It is known for the protein crystals that form during its year of ageing and give the cheese a crunch, along with notes of caramel and toasted nuts.1 Castello also sells it in the United States, where its Havarti cheeses joined the brand in 2012.23 As a Havarti made in Denmark it carries the European Union's Protected Geographical Indication.2

The story

The cheese follows a recipe from 1952 and is made in Denmark from cow's milk.12 After making, it goes to the ripening room for 12 months, during which the texture firms and turns slightly crumbly and the crystals form; each cheese is inspected before it is packed.12 Aged Havarti and Creamy Havarti were among the cheeses that widened the Castello range after Creamy Blue.4
