Why it is renowned

Castello counts Creamy Blue as the leading cheese of its range worldwide.1 It won a silver medal at the International Cheese Awards in 2015 and a gold medal at the International Food Contest in 2019.23 Abroad it is also sold as Double Crème Blue in North America and as Blue Castello in other markets, and cheese references list Blue Castello as a Danish cheese in its own right.245

The story

The Tholstrup Cheese Company began work on blue cheese in the 1960s, and Creamy Blue followed in 1969, meant to join the mildness of a brie to the depth of a blue.1 It is made in Denmark from cow's milk with a high share of cream, which gives the soft, buttery texture; the cultures are added by hand.62 Each cheese is pierced in a star pattern so the blue mould grows evenly through it.6 It is sold in 95 g, 150 g and 300 g sizes.6
