Why it is renowned
An independent panel of Danish cheese experts has named Castello Danish Blue the best Danablu more than once, most recently in 2018.1 It is the Castello version of Denmark's classic blue cheese, sold in Europe in the Castello blue range beside Creamy Blue.21
The story
Castello began developing blue cheeses in the 1960s.3 Its Danish Blue is made in Denmark from cow's milk and cream to the established Danablu method.1 Roquefort inspired it, but it is made from homogenised cow's milk, which gives it a more pronounced bite.1 Blue veins run through a creamy interior.1 The surface is treated with a higher concentration of salt so that it stays white while the mould grows inside during ripening, and each piece is inspected before it is sliced and packed.1
