Hart Bageri

Why it is renowned

Hart Bageri is known abroad as the bakery Richard Hart opened after seven years as head baker at Tartine in San Francisco, with René Redzepi of Noma as a partner.¹ Eater covered the opening in October 2018, when the first morning drew a line around the block and the bakery was set to supply all of Noma's bread.²

It reached a wider audience through the television series The Bear. In season 2 the pastry chef Marcus travels to Copenhagen and buys pastries at Hart's shop on Holmen,³ and the actor Lionel Boyce spent two weeks working at Hart Bageri before filming.⁴

The story

Hart, a baker from London, met Redzepi over a meal at Noma and again in Sydney during Noma's pop-up there; when he left Tartine, Redzepi asked him to start in Copenhagen.² Hart Bageri opened in 2018 on Gammel Kongevej in Frederiksberg, a take-away bakery with an open kitchen where customers can watch the bakers at the oven.²³ The house describes its aim as honouring Danish baking traditions with a touch of British eccentricity.⁵

The menu mixes Tartine-style country sourdough with Danish rye breads and pastries.² The bakery has since opened shops in Islands Brygge, Vesterbro, Nørrebro, Østerbro, the city centre and Refshaleøen; the Holmen shop sits in a former Danish navy building facing the harbour and the Opera House.⁶³
