Why it is renowned
Rye bread sells in quantity at Hart: Richard Hart told Afar that he baked perhaps 20 loaves of Danish rye a day at Tartine in San Francisco, while Hart Bageri can easily sell 200 most days, and that 80 per cent of Danes, offered sourdough or rye, pick rye.1 Eater noted at the opening that the bakery set out to explore Danish breads beside its sourdough because Danes prefer rye.2 Hart's James Beard Award-winning book Richard Hart Bread includes rye pan loaves.3
The story
The Everyday Rye is a 100 per cent rye loaf, naturally leavened and baked in a tin, with sunflower and flax seeds and freshly cooked rye berries in the dough.4 Hart came from Tartine in San Francisco and took up Danish rye baking when he opened Hart Bageri in Frederiksberg in 2018.12
