Why it is renowned
The spandauer is a classic of Danish baking, and Hart's version is one visitors are sent to taste: SWISS Magazine's pastry tour of Copenhagen stops at Hart for the spandauer, reimagined in the style of a croissant.1
The story
A traditional spandauer is laminated dough topped with vanilla cream, its name taken from the Berlin district of Spandau.1 Hart Bageri makes it from its croissant dough with a rich pastry cream baked in, something like a Portuguese custard tart.2
