Why it is renowned
Lagkagehuset runs more than 140 bakeries in Denmark, England and New York City, and trades as Ole & Steen in English-speaking countries.1 Its first bakery outside Denmark opened in London at the end of 2016.2 Its arrival was covered by The Times and The Week in London and by The New York Times.1
The story
Ole Kristoffersen opened the first shop in 1991 in the 1930 building on Christianshavns Torv in Copenhagen that gave the chain its name, Lagkagehuset, the layer-cake house.2 The same year Steen Skallebæk opened his own bakery in Haderslev in South Jutland.2 The two businesses merged in 2008 under the Lagkagehuset name.2 The founders sold to private equity, and since 2017 the chain has been owned mainly by Nordic Capital; it is run from Copenhagen.1
