Why it is renowned
Noma is known for foraging and for its reading of New Nordic cuisine, and it was ranked the best restaurant in the world in 2010, 2011, 2012, 2014 and 2021.1 It has cooked abroad in residencies: at Claridge's in London in 2012, in Kyoto in 2024 and in Los Angeles from March to June 2026.12
The story
René Redzepi and Claus Meyer opened Noma in 2003 in an old trading warehouse at Strandgade 93 in Christianshavn; the name joins the Danish words nordisk and mad, Nordic food.1 It closed at the end of 2016 and reopened in February 2018 on Refshalevej.1 Regular service ended in December 2024, and Noma carried on as a food lab and through residencies abroad.1 Redzepi stepped down in March 2026.1 From August 2026 the restaurant is back in Copenhagen, with Pablo Soto as executive head chef, Mette Brink Søberg as head of research and Annika de Las Heras as chief executive, and a menu that changes every month.2
