Why it is renowned

Parsley Salon has held one Michelin star since the 2025 edition of the Michelin Guide and keeps it in 2026.12 It is one of 42 restaurants in Denmark with a star in the 2026 guide, which covers Denmark together with Finland, Iceland, Norway and Sweden in one Nordic edition.1

The story

Parsley Salon seats guests at six tables.3 The menu follows the seasons: the team forages in forests, along the coast and in family gardens, buys the rest from local farms and uses each ingredient whole.3 Drinks are chosen as pairings for each dish rather than from a long list.3
