Why it is renowned
Syttende was given a Michelin star in September 2021, the first for any restaurant in Sønderborg.1 The Michelin Guide Nordic Countries has kept the star in every edition from 2022 to 2026.2
The kitchen is known for a single seasonal menu built on the produce of Southern Jutland, served high above the town and the fields it comes from.34
The story
Syttende opened on 23 October 2019 on the seventeenth floor of the nineteen-storey Alsik Hotel in Sønderborg, with Jesper Koch as culinary director and Peter Rødsgaard as head chef.1 The restaurant is part of Alsik Hotel & Spa and seats guests at seven tables.56
Rødsgaard travels Southern Jutland through the year for ingredients. With his team he gathers sea buckthorn and rose hips along Sønderborg's 250 km of coast, and porcini, chanterelles, spruce and birch sap in the forests; he works with small local farms, many held by one family for generations, and draws on old household ways of drying, pickling and ageing.4 The menu changes with the seasons.3
