Why it is renowned
Pearl by Paul Proffitt won a Michelin star in the 2025 edition of the Michelin Guide and keeps it in 2026.12 It is one of 42 restaurants in Denmark with a star in the 2026 guide, which covers Denmark together with Finland, Iceland, Norway and Sweden in one Nordic edition.1
The story
The villa was built in 1900 as the summer house of a Hamburg merchant and from 1938 served as a rest home for war veterans and, from 1981, as a camp school for children from South Jutland.2 From 2007 to 2024 it housed Restaurant Bind.2 Anne Sofie Rolner Reese bought the house at the end of 2023, and after a full renovation Pearl by Paul Proffitt opened in March 2025.2 The dining room looks over Flensburg Fjord.3
