Why it is renowned

Substans holds one Michelin star and has kept it in every edition of the Michelin Guide from 2022 to 2026.1 It first won the star in February 2015 and held it until 2019; after closing that April to move, it lost the star in 2020 and won it back in 2021.2

The story

Louise Mammen and René Mammen, then René Tang Jensen, opened Substans in Aarhus on 1 December 2005, after both had worked at the two-star Restaurant Ensemble in Copenhagen.2 The first rooms, fitted out with the help of friends and family, seated 44 guests.2 Today the restaurant sits on the top floor of Pakhusene at Aarhus Ø, in rooms that draw on the plain architecture of the 1960s, and the kitchen works from local, seasonal produce.34
