Why it is renowned

Sprudge names Prolog with April, La Cabra and Coffee Collective among the Copenhagen roasters that have become synonymous with the Scandinavian style of coffee.¹ European Coffee Trip, the guide to Europe's specialty coffee, has written about its first bar and lists all four of its Copenhagen bars in its city guide.²³

The story

Sebastian Quistorff and Jonas Gehl opened Prolog Coffee Bar in March 2016 in Kødbyen, the Meatpacking District of Vesterbro, together with the food company I'm a KOMBO; it was meant as a temporary installation and stayed.² Prolog now roasts its own coffee, sells it wholesale and by subscription, and uses one roast of each coffee for every brewing method, which it calls omni roasting.⁴ Its bars are in Kødbyen, on Randersgade in Østerbro, on Marguerite Vibys Plads in Frederiksberg and on Papirøen.⁵
