Why it is renowned

La Cabra runs its own cafés and bakeries in New York, Bangkok and Muscat, and roasts in Brooklyn as well as in Copenhagen; it sells to home subscribers in more than 60 countries.¹²³ It opened on 2nd Avenue in New York in 2021 and added a second New York café in SoHo, which the trade press took as its arrival as a New York coffee name.³ Sprudge names it with Coffee Collective among the roasters that came to stand for the Scandinavian style of coffee.⁴

The story

Esben Piper founded La Cabra in Aarhus in 2011; it began sourcing and roasting its own coffee in 2013.¹³ It roasts each coffee to a single profile chosen at the cupping table rather than separate roasts for filter and espresso.¹ The roastery later moved to Copenhagen, and a roastery in Bushwick, Brooklyn serves North America.¹³ The cafés are designed by its own team; the bars in New York are clad in handmade tiles from the Aarhus ceramicist K.H. Würtz.²³ It still runs coffee bars and a bakery in Aarhus.²
