Why it is renowned

Classic is the maker's prize-winning plate.1 The maker credits it with bronze at The Liquorice Taste Award in 2019 and gold in 2020.2 The 2020 gold was given in Tivoli by a unanimous jury.3

The story

Classic is made in Bagsværd from powdered raw licorice, salmiak and sea salt; its taste comes from the Maillard reaction between milk protein and sugar in the pot.1 After cooking, the licorice is poured into moulds, sets overnight, and is cut by hand with a sturdy knife and packed.1
