Why it is renowned

The Guardian names Bæst among the Copenhagen restaurants led by people from Noma, crediting it to Christian Puglisi, once Noma's sous chef.1 Its wood-fired pizza has been recognized among the best in Europe.2

The story

On the first floor Bæst keeps its own small dairy and charcuterie, where mozzarella, burrata, stracciatella and cured meats are made every day.3 The milk is from Jersey cows and the meat from local farms it works with.3 Downstairs the kitchen serves the cheeses and cured pork beside pizza from a wood-fired oven.2
