Why it is renowned
Aure has held one Michelin star since the 2024 edition of the Michelin Guide and keeps it in 2026.1 It is one of 42 restaurants in Denmark with a star in the 2026 guide, which covers Denmark together with Finland, Iceland, Norway and Sweden in one Nordic edition.1
The story
Chef Nicky Arentsen and Emma Nørbygaard created Aure in a gunpowder house from 1745 on Holmen.2 Arentsen builds the menu on three elements: fish and seafood from the sea, vegetables and herbs from the earth, and game and berries from the forest, bought from suppliers he works with closely.2
