Why it is renowned

Its four-year-old beech-smoked single malt, Bøg, was named European Whisky of the Year in Jim Murray's Whisky Bible 2020, ten years after the distillery filled its first cask.12

The story

In 2009 the farmer Nicolaj Nicolajsen set out to turn the organic grain of the family farm into whisky.2 The whole of it happens at Gyrup: the grain is grown in the farm's fields, malted in a drum maltings the distillery built itself, mashed and distilled only once, and the malt is smoked over Danish beech.1 Old Danish grain varieties go in beside modern ones.1 The whisky warehouse is in the farm's former horse stables.2
