Why it is renowned

Copenhagen Distillery's whisky travels. In 2024 it made an aquavit-cask whisky with the British department store Harvey Nichols.¹ It has sold in Singapore since the summer of 2024, and in 2025 it bottled a Singapore Edition of 68 bottles for the Takashimaya department stores there.² The international drinks trade paper The Spirits Business has covered its releases and put its master distiller, Lasse Öznek, on its podcast.³

The story

The distillery was established in Copenhagen in 2014 and released its first single malt in February 2020.¹ It is led by Lasse Öznek, a pharmaceutical scientist who joined in 2017 and became its master distiller.³ The whisky is made from 100 percent organic Danish barley: gently milled, partly cold-smoked in a technique taken from Danish cooking, distilled once in a Müller hybrid still and matured in Hungarian oak.⁴ Each bottle of the annual Raw series is filled, wax-sealed, labelled and signed by hand at the distillery.¹
