Danish boiled sweets: bolcher made by hand
Bolcher are the Danish hard boiled sweet: sugar boiled to about 180°C, then pulled, striped and cut by hand on a table while the mass is still warm. In Copenhagen, Sømods Bolcher has made them this way since 1891, holds a royal warrant, and boils sweets in front of visitors at Nørregade 36 on weekdays.
