Why it is renowned
Udtryk holds one Michelin star, first awarded in the 2025 Denmark guide and kept in 2026.1 The Michelin Guide lists it under creative cuisine at Teglgårdstræde 8A in central Copenhagen.2
Its chef, Pascal Dallarosa, had already won a Michelin star in Austria as head chef at Rossbarth before he led the kitchen here.3
The story
Udtryk (said OOD-trek) is one of the restaurants of the Copenhagen group Norrlyst.3 Pascal Dallarosa has been with it from the start, first as sous chef; he now runs the kitchen.3
The menu follows an omakase approach: there is no fixed card, and the dishes change with what the kitchen buys that day, often fish landed the same morning, herbs and cuts of aged meat.34 The current menu runs from hiramasa with pine and wasabi to A5 wagyu with juniper and a lapsang custard.4 Groups can book a private dining room.5
