Why it is renowned
formel B has held one Michelin star since 2004 and keeps it in the 2026 edition of the Michelin Guide.12 Its owners count it as the Copenhagen restaurant with the longest unbroken run of a star.3 Many guests come for the wine as much as the food: Burgundy makes up 60 to 70 per cent of the list, often in several vintages.1
The story
In 2003 two young chefs, Kristian Arpe-Møller and Rune Amgild Jochumsen, took over the formel B premises at the end of Vesterbrogade; the star came a year later.3 Arpe-Møller leads the kitchen as co-owner and head chef, and Jochumsen runs the dining room and built the wine cellar.3 The cooking pairs French method with Danish flavours, in dishes such as scallops with Jerusalem artichoke, langoustine à la nage and potato with egg yolk and truffle.1
