Why it is renowned

LYST holds one Michelin star and has kept it in every edition of the Michelin Guide from 2022 to 2026.1 It sits in Fjordenhus, the building rising out of Vejle Fjord that Olafur Eliasson and Sebastian Behmann designed with Studio Olafur Eliasson, opened in 2018.2

The story

LYST was founded by Morten Kirk Johansen (1973-2021) and is now owned by his two children.2 The restaurant aims to source everything it serves from within a hundred miles and use each ingredient whole.2 Each day the kitchen writes a new menu of some twenty servings, built around the four elements earth, air, fire and water.2 Fjordenhus, reached by a footbridge, is 28 metres high and made of four intersecting brick cylinders.2
