Why it is renowned
The foil block is what most people know as Lurpak: Danish butter in silver foil with the lur mark.12 At the World Championship Cheese Contest in 2018 Lurpak won the salted butter class with a score of 99.8 out of 100, ahead of more than 30 other butters.3 In Britain, Lurpak's largest market, the slightly salted block is the butter Arla offers to chefs.24
The story
The block carries the lur mark that Danish dairy farmers created in 1901 as a shared seal of quality for their butter.2 The butter first went out in wooden casks, then in greaseproof paper, and from the 1950s, when the packaging machine came in, in the foil packs it is sold in today.2 The butter is churned from the cream of fresh milk, ripened with lactic cultures, with a pinch of salt added; more than 20 litres of milk go into each kilo.54 It is made at Arla's dairy in Holstebro.3
