Why it is renowned

Grand Cru is Summerbird's classic flødebolle, and Politiken named it Denmark's best gourmet flødebolle.1 It sets a vanilla foam on a marzipan base under a thick layer of dark chocolate.2

The story

Summerbird first made the Grand Cru in 2002.1 It reworked the conventional flødebolle with a moist marzipan base, a foam made with real vanilla and a thick layer of dark chocolate.2 The marzipan starts with Mediterranean almonds, which are stone-rolled for texture and then roasted in copper kettles.2
