Why it is renowned
Pure Amande is the first Summerbird butterfly, made in 1986 from marzipan and dark chocolate, and the piece the maker says the rest of its work grew from.1
The story
Pure Amande grew out of a request for a butter cookie from an American business contact. The Grønlykke family made a marzipan from Spanish Valencia almonds for it, then chose to coat the marzipan in chocolate rather than bake it into dough.1 The first butterfly followed in 1986: marzipan under dark Amazonas 61 percent chocolate.1
