Why it is renowned

Texture received a Michelin star in the 2025 Nordic guide and kept it in 2026.¹ Its cooking is French at the root, built on produce from small producers in and around Copenhagen, with caviar, truffle and shellfish on the menu.²

Its chef, Karim Khouani, had already won Michelin stars in Sweden: at Ambience in Malmö in 2015, and at Sture, which gained its star three months after it opened.³

The story

Karim Khouani grew up in Marseille, where his grandmother's kitchen first drew him to food. He worked in kitchens in France and England, including under Marco Pierre White, before moving to Sweden.³

Texture opened on Sølvgade in central Copenhagen in October 2024.² The name refers to how food, wine, glassware and table linen feel as much as how they taste.² Albert Dalum leads the dining room and the sommeliers.³ The kitchen serves two menus, Amplitude and Nuance.⁴
