Why it is renowned

Akmē entered the Michelin Guide with one star in the 2026 edition, having held none in the four years before; the guide lists its cooking as Japanese.1 It is one of 42 restaurants in Denmark with a Michelin star in that edition.1

The story

Akmē serves one seasonal set menu that draws on Japanese and French cooking, in a small dining room at Sandkaj 39 in Copenhagen, meant to be as calm and focused as the kitchen.2 The menu is built on fish and shellfish, seasoned with soy sauce and miso, and comes with a beverage pairing; there is no vegetarian menu.3
