Why it is renowned
Raspberry Red and Liquorice were the two pieces with which Summerbird brought back the dragée almond in 2005, at a time when it calls the category forgotten and extinct.1
The story
Raspberry Red came in 2005: lightly roasted Spanish almonds, dragéed in milk chocolate and dusted with raspberry granules.1 Summerbird roasts its dragée almonds lightly for aroma and texture, coats them in chocolate from its own production and finishes them in a fine powder.2 It uses only Spanish almonds for its dragées, varieties such as Marcona, Largueta and Valencia, known for their high oil content.2
